This is a food hack. Since we really love to eat this Charlie Chan Pasta. I tried to experiment and cook it at home.
INGREDIENTS: for the SAUCE
1/4 cup oyster sauce
1/3 cup chili bean sauce (I used LKK brand)
1/3 cup char siu sauce (I used LKK brand)
1 1/2 tbsp peanut butter
1 tbsp soy sauce
3 tbsp brown sugar
1 cup water
Make slurry, to thicken (1/2 cup water + 1 tbsp cornstarch)
PROCEDURE FOR SAUCE
In a sauce pan put all ingredients and bring to boil over medium heat.
Boil to thicken the sauce and continuously stirring until you achieved the consistency that you want.
Set aside until ready to use. (Note:You can adjust the measurement of the ingredients of the sauce according to your taste.)
INGREDIENTS: CHICKEN PASTA
500g spaghetti noodles (cooked according to directions on pack)
2 tbsp sesame oil / Vegetable oil
2 tbsp peanut oil / Butter
4 cloves garlic- minced
4 cloves garlic- slivers cut
1 whole chicken breast sliced, deboned and remove the skin, season with salt and pepper
2 cups sliced fresh shiitake mushrooms
1/3 cup spring onions, sliced into 2″ long pieces
1 cup grease-less peanuts
PROCEDURE FOR THE CHICKEN PASTA
Heat the sauteing pan put a little bit of oil then cook the chicken 3 minute on both side or until cook but not brown. Then set aside.
Saute the slivers cut garlic cook until light brown then removed from the pan, reserved for garnishing. Saute minced garlic until browned.Add in shiitake mushrooms and saute for another minute.
Add in the cook chicken.
Toss in the spring onions.
Add the prepared sauce. Toss in noodles and peanuts and the slivers cut garlic.
Add sauce according to taste.
Turn off fire and serve warm.
